Some background

Our honey frames are removed from the hives when we harvest, and we use a system called crush and strain to extract the honey.

Essentially the comb is cut from the frames and placed into a large container and the cells broken open, to allow the honey to drain from the wax. This ensures that the aroma and taste of our honey is not compromised by centrifugal spinning, which releases the fine aromatics from spun honey, thus preserving the beautiful aroma of our honey when you open the bottle. No heat is used in the processing from comb to bottle.

We do not filter our honey but we run it through fine strainers. This ensures that the pollen found in suspension in pure natural honey is retained, adding significantly to the beautiful flavour of our honey.

We never use heat in the entire process from hive to bottle, further preserving the fine flavours.

At no time do we feed our bees a sugar and water mix, which could compromise the flavour of our honey.
